• Rewrap with fresh plastic wrap after each use.
• Air is the enemy. Plastic bags and in Tupperware will cause it to spoil quickly.

• If you see mold, trim it off and enjoy what's beneath.
• Store in the fridge, tucked in the veggie drawer.
• Let it come to room temp before serving. It shines when relaxed.
