We age this Gorgonzola for about a year.
It starts out as a sweet, creamy dolce-style Gorgonzola. The extra aging takes it closer to a piccante style: earthier, less creamy, and a strong bleu that bites you back.
Need to tame it a bit? Drizzle on some honey.
