Arepas con Queso (with Cheddar Curds)

Masa Dough

  • Mix softened butter, hot water, and salt.

  • Gradually add Maseca (about 1/2 cup at a time) until dough is soft but not sticky.


Assembly

  1. Flatten a ball of dough into a disk.

  2. Add cheddar curds to the center.

  3. Top with a smaller disk, fold edges over to seal in the cheese.


Cooking

  • Fry in ~1/4 cup oil over medium heat for ~5 minutes per side, until golden and crisp.


Serve With

  • Refried pinto beans

  • Curtido (tangy cabbage slaw)
