Masa Dough

Mix softened butter, hot water, and salt.

Gradually add Maseca (about 1/2 cup at a time) until dough is soft but not sticky.
Assembly

Flatten a ball of dough into a disk.

Add cheddar curds to the center.

Top with a smaller disk, fold edges over to seal in the cheese.
Cooking

Fry in ~1/4 cup oil over medium heat for ~5 minutes per side, until golden and crisp.
