Ingredients
For the Tofu:

1 block extra firm tofu, cubed

Seasoned flour: salt, pepper, red pepper flakes, garlic powder, onion powder, za’atar

Wet coat: tahini + a little yogurt

Final coat: hemp seeds + grated parmesan

Oil for shallow frying (or bake at 375°F for 30 mins, flipping halfway)
For the Pasta:

8 oz pasta
-
Salted water (for boiling)

Mild ajvar (roasted red pepper + eggplant spread)

Grated parmesan
Instructions

Prep Tofu: Dredge tofu cubes in seasoned flour → dip in tahini-yogurt mix → coat in hemp seeds + parm.

Cook Tofu: Shallow fry until golden and crispy, or bake at 375°F for 30 mins.

Make Pasta: Cook pasta in salted water. Drain and mix with ajvar and parmesan.

Serve: Top pasta with crispy tofu and more parm if you’d like!
