Ajvar Parmesan Pasta with Crispy Za’atar Tofu

Ingredients

For the Tofu:

  • 1 block extra firm tofu, cubed

  • Seasoned flour: salt, pepper, red pepper flakes, garlic powder, onion powder, za’atar

  • Wet coat: tahini + a little yogurt

  • Final coat: hemp seeds + grated parmesan

  • Oil for shallow frying (or bake at 375°F for 30 mins, flipping halfway)

For the Pasta:

  • 8 oz pasta

  • Salted water (for boiling)

  • Mild ajvar (roasted red pepper + eggplant spread)

  • Grated parmesan


Instructions

  1. Prep Tofu: Dredge tofu cubes in seasoned flour → dip in tahini-yogurt mix → coat in hemp seeds + parm.

  2. Cook Tofu: Shallow fry until golden and crispy, or bake at 375°F for 30 mins.

  3. Make Pasta: Cook pasta in salted water. Drain and mix with ajvar and parmesan.

  4. Serve: Top pasta with crispy tofu and more parm if you’d like!
