Great cheese starts long before the milk enters the creamery. It begins with healthy animals, thoughtful farming practices, and respect for the land.

Animals raised in low-stress environments and given access to quality pasture often produce richer, more flavorful milk. Grazing on diverse grasses and forage naturally affects the taste and quality of the cheese that follows.

Many artisan cheesemakers focus heavily on animal welfare. That means proper nutrition, clean living conditions, careful veterinary care, and allowing animals to behave naturally whenever possible.

Pasture-based systems are especially important in farmstead cheesemaking. Sheep, goats, and cows that spend time outdoors grazing often produce milk with greater complexity and seasonal variation.

Good farming practices also protect the land itself. Rotational grazing, reduced chemical use, and soil-conscious farming all contribute to healthier ecosystems and more sustainable food production.
