How Long Cheese Lasts (and How to Tell if It’s Gone Bad)

We get this question a lot at markets: “How long will this cheese last?” The answer depends on the style, but knowing a few basics will keep your cheese happy and safe.

Fresh cheeses like chèvre or ricotta are delicate, plan to enjoy them within a week of opening. Soft-ripened cheeses like brie keep about 7–10 days once cut, if wrapped properly. Hard cheeses like cheddar, gouda, or parmesan can last several weeks (or even months) if stored right.

The key is wrapping and refrigeration. Use wax or parchment paper, then a loose plastic wrap or container. Cheese likes to breathe, airtight bags are its enemy!

Signs your cheese has gone bad? A sour or ammonia smell, slimy surface, or pinkish mold (blue or white mold on hard cheese can simply be trimmed away).

Remember: real cheese is alive. It changes, matures, and sometimes surprises you, that’s part of its charm. Treat it kindly, and it’ll reward you with flavor to the last bite.
