Cheese comes in all kinds of personalities, and just like people, each has its own story. Here’s a crash course in the main types of cheese you’ll find on our tables and in our markets:

Fresh cheeses: Mild, tangy, and oh-so-creamy. Think chèvre, ricotta, or mozzarella. They’re young, bright, and easy to love.

Soft-ripened cheeses: Brie and camembert are buttery dreamboats that ripen from the outside in. Perfect for spreading on crusty bread.

Semi-soft cheeses: Havarti, fontina, and young goudas melt like magic. Great for grilled cheese or snacking.

Hard & aged cheeses: Cheddar, parmesan, manchego , firm, crumbly, and full of deep, nutty flavor.

Blue cheeses: Funky, sharp, and totally craveable, gorgonzola or Mindoro Bleu bring bold personality to any board.
Each type gets its texture and flavor from a mix of milk type, cultures, and aging time. Sheep’s milk cheeses (like many of ours) tend to be rich, buttery, and smooth, with a clean finish that makes them shine on their own.
