Roasted Brussels Sprouts with Shredded Asiago / Parmesan

This irresistible dish starts with fresh Brussels sprouts, halved and seasoned with olive oil, salt, pepper, and aromatic thyme. For an extra burst of flavor and texture, add crispy cooked bacon bits before serving. Stalk or 1 1/2 pounds of Brussels sprouts

1 tsp olive oil

1 tsp salt

1 tsp of grounded pepper

Sprigs of fresh thyme

1/3 cup of Aged Asiago

1/3 cup of Aged Parmesan


  1. Preheat oven to 400 F.

  2. Clean Brussels sprouts and cut in halves.

  3. In a large baking pan, add Brussels sprouts along with salt, pepper and thyme.

  4. Drizzle olive oil and mix. Make sure everything is mixed together and spread evenly.

  5. Bake in the oven and roast for 35 minutes, until crisp outside and tender inside. Shake the pan from time to time to brown the Brussels sprouts evenly.

  6. Remove from the oven and sprinkle cheeses evenly.

  7. Place back in the oven for additional 10 min or until the cheeses are melted and golden brown.

  8. Remove from the oven, let it cool bait and enjoy

  9. For added crunchiness, add some cooked bacon bits :-).
